English Muffins with a sweet touch of Maple Sugar

We love bread, all kinds of bread! Good that we have some professional bakers in our family. (Check out Fika Baking Co at fikabaking.co) But when that fresh loaf isn’t around I like to make these English muffins.This simple English muffin recipe is just that, simple! Once you make them you probably won’t be buying the processed store versions anymore.

Ingredients:

1/2 cup instant nonfat dry milk

1 tablespoon Maple sugar

1 teaspoon salt

1 tablespoon softened butter

1 cup hot water

2 1/4 teaspoons active dry yeast or 1 envelope

1/4 teaspoon Maple sugar

1/3 cup warm water

2 & 3/4 cups flour

Metal rings, cooking spray and cornmeal

Directions:

Mix 1 cup hot water with the dry milk, 1TBsp Maple sugar, salt & butter. Stir til dissolved. In small bowl combine yeast, 1/4 tsp maple sugar & 1/3 cup warm water. Add to dry milk mixture. Stir in the flour and mix throughly. Cover bowl and rest 1/2 hour. Heat a large fry pan or cast iron skillet. I use a low temp as the pan gets hotter and hotter as time moves on. Coat lightly the inside of the metal rings with cooking spray, sprinkle with  cornmeal and place them in the hot pan. Scoop dough batter (about  heaping 1/3 cup) into the ring, cover with a large pot top, or piece of tinfoil, or small cookie sheet. Cook til bottom is deliciously golden brown about 5 minutes,

Keep an eye on them!

Flip using tongs or spatula and cook the other side. Cool, fork split, toast and enjoy!
