Zucchini Chocolate Chip Bread sweetened with Maple Sugar

When the garden yields an abundance of zucchini I like to shred it and make this bread recipe. The loaf is chocolatey and the zucchini keeps it so moist.

3/4 cup Maple sugar

1/4 cup softened butter

1/8 cup mild olive oil or your oil choice

1 teaspoon vanilla

1 egg

1 1/4 cup flour

1/8 cup unsweetened cocoa

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 cup buttermilk

1 cup shredded zucchini

1/3 cup chocolate chips

Heat oven to 350 degrees.

Prepare one loaf pan.

Combine in mixing bowl and beat well; Maple sugar, butter, oil, vanilla and egg.

Add flour, cocoa, baking soda, salt and the buttermilk; blend well.

Fold in the zucchini and chocolate chips.

Spread into prepared loaf pan.

Bake for 35-45 minutes or until a toothpick comes out clean.

Cool.

Optional - Add 1/3 cup chopped nuts.

Replace the vanilla with almond extract.
