Buttermilk Griddle Cakes

These Old-Fashioned Griddle Cakes are perfect for a hearty breakfast! These griddle cakes originate from and Old Pennsylvania Dutch recipe.

  • 2 Cups Cornmeal

  • 1 Cup Flour

  • 1 Teaspoon Baking Powder

  • 1 Teaspoon Baking Soda

  • 1 Teaspoon Salt

  • 2 Tablespoons Sugar

  • 2 Large Eggs

  • 2 Cups Buttermilk

  • 2 Tablespoons Melted Butter, plus more for cooking

  • 2 Teaspoons Vanilla Extract

  1. In a large bowl, whisk together the cornmeal, flour, baking powder, baking soda, salt, and sugar. In a medium bowl or large glass measuring cup, whisk together the eggs, buttermilk, melted butter and vanilla.

  1. Stir the wet ingredients into the dry until just combined.

  2. Heat a griddle over medium-low heat. Lightly grease with butter. Pour the batter 1/4 cup at a time for each pancake. Flip when they begin to bubble and turn golden. Cook on the second side until golden and cooked through.

  3. Serve with butter, real maple syrup, fruit or jam and enjoy!
