Fluffy Pancakes

This recipe is perfect for easy, fluffy and delicious pancakes. We made a few adaptations to Holly Nilsson’s original recipe. (Her original recipe can be found on spendwithpennies.com)

  • 2 cups flour

  • 2 tablespoons maple sugar (you can also use granulated)

  • 4 teaspoons baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1 3/4 cup milk

  • 2 eggs

  • 2 tablespoons melted butter

  • 1 teaspoon maple extract (you can also use vanilla)

  1. Wisk together milk, eggs, melted butter and maple extract.

  2. Combine flour, sugar, baking soda, baking powder and salt in a bowl.

  3. Create a well in the middle of your dry ingredients and add your milk mixture. Stir until just combined. (Your batter may look slightly lumpy) Keep in mind that the thicker your batter is, the fluffier your pancakes will be. Feel free to add more milk!

  4. Heat your griddle or frying pan to medium heat and lightly grease with butter.

  5. Pour approximately 1/4 cup of batter for each pancake and cook on one side until bubbles form and begin to pop. (Around 2 minutes) Flip and cook on the opposite side for 1-2 minutes.

  6. Serve with warm maple syrup, salty butter, fluffy whipped cream and fresh fruit.
