Liége Waffles with Maple Pearl Sugar
Breakfast on Christmas Day at out house is a big deal, more so than a Christmas dinner. All our favorites in one meal; our fresh eggs and maple syrup, pasture raised bacon from a local farm, lots of butter and these delicious Belgian waffles with our Maple Pearl Sugar.
What is Pearl Sugar?
It’s the chunks of maple sugar left behind after sifting the maple granulated sugar. The sugar sifts through different size sieves, to end up with the maple granulated, crumbles and pearl sized sugars!
A bit different, this is a yeast dough. It is well worth the little extra time it takes to put together. The pearl sugar forms pockets in the dough that once off the griddle gives you a burst of hot maple gooey crunch. The dough is sweet enough where you could let the maple syrup pass by but it’s Christmas, indulge!
1 cup lukewarm milk
2 1/2 tsp instant yeast
4 cups flour
2 lg eggs
6 Tbsp brown sugar
2 tsp vanilla
1/2 tsp cinnamon
1/2 tsp salt
8 oz softened cubed butter
1 cup Maple Pearl Sugar
In large mixing bowl gently whisk yeast into lukewarm milk, let sit for 5 minutes. Add and mix to form a sticky dough the flour, eggs, brown sugar, vanilla, cinnamon and salt. Add the softened butter and mix just til combined. Cover dough and let rise 2-3 hours. Gently fold the maple pearl sugar into the dough. Form the dough into balls about the size of a golf ball, for small waffles or a tennis ball for a larger waffle, place them in a baking pan or on a large platter and let them rest 15 minutes. Prepare and heat up the waffle iron. Bake til golden brown.
Be careful the pearl sugar is very Hot!
Of course you don’t need to wait for Christmas to enjoy these waffles!

Origin story:
According to legend, the waffles were created in the 18th century by the chef of the Prince-Bishop of Liège. The chef presented the waffles to the prince as a sweeter variation on the typical waffle.
