Gramma Bishop’s Banana Muffins

This is a simple Banana Muffin recipe that was passed down from my husband’s Gramma Bishop. Where she got it from we will never know. It’s quick to mix together and works well as muffins, a sweet loaf or bundt cake. For 40 years of marriage, this recipe has been my ‘go to’ when it’s time to do something with those soft, sweet smelling, mushy bananas. My only change has been to switch out the white sugar for our maple sugar.

Preheat oven to 350 degrees

Mix -

1 cup Maple sugar

1/2 cup melted butter

1 large egg

4 - 5 mashed bananas

2 Tbsp milk or cream

2 cups flour

1 tsp each - baking soda, baking powder and salt

Optional - top or mix in chocolate chips, chopped walnuts, etc.

Put into prepared pan of your choice

Muffins will take about 15-20min - depending on your oven

Loaf or Bundt pan about 25 - 35min - depending on your oven

Optional - If using bundt pan when cooled frost with cream cheese frosting or sprinkle with powdered sugar
